Coffee cupping is a standardized method used by coffee professionals to evaluate the aroma, flavor, and quality of different coffees. To perform a coffee cupping, you start by grinding a small, precise amount of coffee (typically 12 grams) and placing it into a cup. Next, pour 200 milliliters of hot water (around 200°F or 93°C) over the grounds, allowing the coffee to steep for 4 minutes. During this time, a crust of grounds forms on the surface. You break the crust with a spoon, releasing the coffee’s aroma, which is carefully observed. After skimming off the grounds, the coffee is left to cool slightly before tasting. Tasting involves slurping a small spoonful, which aerates the coffee and spreads it across your palate, allowing you to assess its body, acidity, sweetness, and aftertaste. This method is widely used to compare coffee varieties, blends, or roasts.
